Day 10: It’s Tuesday, innit? Taco Tuesday!
A Breakdown:
The taco: an indisputable dish that everyone loves, in some form or another. People go wild for them on a Tuesday. And on 2–22–22 how could you not have a taco?
The thing is, a taco can really be anything. Simple, mystifying, laborious, spicy enough to make you cry, or all of the above. I live by the motto that you can really throw anything in a tortilla. Life hack: throw your leftovers into a tortilla, add some cheese- and you’re good to go. Talk about innovative.
In sticking with somewhat of a theme, I took the elements of a traditional taco (i.e. meat, greens, salsa) and attempted to recreate with my leftovers and their respective flavor profile.
What you’ll need:
This is a dish based on recycled goods- so I’m not gonna tell you what to include. A tortilla certainly helps, though.
I took a leftover mushroom/celery/spinach salad and took the flavors to Polski town (creds to Paprika). Untraditional at heart, but a big-brained move. I swapped the salsa for sauerkraut, and simmered leftover rotisserie chicken in tomato puree to round off the Polish flag. A bit random, but who’s complaining.
Step 1: Shred, Simmer & sautée
Shred that leftover rotisserie chicken, place it in a pot, and simmer with the tomato puree. Don’t forget a generous pinch of salt, even more generous pinch of paprika, and the ubiquitous scrunch of pepper. Cover and forget about for around 10 minutes.
I was feeling wilted spinach, so I took it upon myself to do just that. You could add the leftover salad cold, perhaps. But…it’s a rainy day after all, innit? IMO, wilted lettuce > fresh. I sautéed the entire leftover salad with a bit extra balsamic and called it a night.
Step 2: Flame the Tortilla
It makes me a bit sad when people put their tortillas in the microwave. Every time I see a tortilla, it is telling me it wants to be charred…over an open flame. Who am I to deny this?
Step 3: Sauerkraut, Sour Cream, Dill & Assemble
After the tortilla’s been throughly scorched, you can assemble. Here’s my order: meat, veggies, sauerkraut, sour cream, dill, and a quick pinch of paprika. Mix & match if you please.
Here’s some photos. Please halt judgement on the taco, it’s not the prettiest, but the flavor’s there. A beauty in disguise, innit?
Well, I hope you repeated, “It’s Tuesday, innit” as many times as a Brit has in their life. 2–22–22 only deserves such an honor.
